History

Founded in 1870, we have always adhered to the principle of quality first.

He established his family in Kaminoda, Omi Hino (present-day Hino City, Shiga Prefecture). As a vassal of Lord Gamo Ujisato, he established a base in the Omi region, and under the name of Hinoya Sahei, he traveled from Goshu Hino to all over Honshu as a peddler from around the beginning of the Edo period (reportedly in 1680). He later set up a shop in Hida to do business, but was so captivated by the kindness of the people, the beauty of nature, and the elegant customs of Hida that he decided to settle here and began brewing sake while selling goods. In the Meiji era, sake brewing became the family business, and in 1956 it was incorporated as Tenryo Sake Brewery Co., Ltd., a company that continues to operate to this day.

Water and rice

100% sake brewing rice used, high quality due to in-house polishing

Famous varieties of rice suitable for sake brewing include “Yamada Nishiki,” “Gohyakumangoku,” and “Miyama Nishiki,” but Tenryo Sake Brewery mainly uses “Hida Homare,” a specialty of Hida. “Hida Homare” is a type of rice grown in paddy fields at the foot of the Northern Alps in the Hida mountain range, where there are large temperature differences. The heart of the rice is soft on the inside and hard on the outside, making it ideal for steaming. It is a specialty of Hida that is ideal for sake brewing. All of the rice used is produced by contracted farmers, who produce the highest quality ingredients. The time-consuming polishing process is generally outsourced to a professional, but in order to ensure consistent quality, Tenryo Shuzo uses advanced computer-based polishing machines to ensure thorough polishing 24 hours a day.

Uses natural underground water pumped up from the Hida Mountains

We use 100% natural water. We use genuine 100% natural water, pumped up from 30 meters underground from the Hida Mountains. This water is soft and naturally sterile, making it ideal for sake brewing. We have installed a deep well in front of the brewery so that locals can enjoy the water, and it is popular. Tenryo Sake Brewery has its water quality tested annually by the Hokuriku Institute of Public Health. In addition, in months when the above tests are not conducted, regular tests are conducted every month at the Food Microbiology Center, ensuring safety when brewing sake.

“Hida sake speaks of Hida” – proof of high quality sake brewing

This Tenryo sake is made by a master brewer, who pours his soul into it using “Hida Homare,” rice perfect for sake brewing, grown with the bounty of Hida’s nature, and groundwater from the Hida Mountains, which has been flowing continuously since ancient times. This is “Hida sake that speaks of Hida,” handed down from Hinoya Sahei, who loved Hida during the Edo period. Tenryo Sake Brewery has the highest percentage of designated sakes, such as ginjo sake, junmai sake, and honjozo sake, in the prefecture. This is proof that they use high-quality locally grown rice to make high-quality sake. They also have the highest percentage of unpasteurized sake (sake that has never been pasteurized) shipped in the prefecture. Tenryo Sake Brewery has won numerous awards. They also produce high-quality sake that is highly regarded not only in Japan but also overseas.
