Traditional sake brewing loved by locals

Located in Kamioka Town, Hida City, at the northernmost tip of the Hida region, on the border between Gifu and Toyama prefectures, Otsubo Sake Brewery has been brewing sake since its founding in 1842. Based on the concept of “creating sincere products that are not swept away by the trends of the times,” this brewery has been brewing sake loved by locals for over 170 years using traditional methods rather than modern methods. In addition, the representative brands they brew, “Kamiyo” and “Hida Musume”, have been loved for many years as Hida’s evening drinks and are literally “local sakes”. In their quest for unchanging deliciousness, they continue to cherish and protect their traditional sake brewing methods, which are filled with sincerity, passion and heartfelt dedication.

Dry “Kamiyo” Sweet “Hida Musume”

Otsubo Sake Brewery has two representative brands. Since its founding, the sake “Jindai” has been the mainstay, while in the Showa period, they produced the sweeter “Hida Musume.” The sharp, dry Kamiyo and the rich, sweet Hida Musume are now the two main pillars of Otsubo Sake Brewery and have become staple sakes that continue to be loved in the local Hida region. Another popular item is the limited edition “Kamiyo Kamisumi Ginjo,” which is only shipped out in April and October of the year, and is so popular that some sake connoisseurs come from outside the prefecture in search of it. The limited edition nigori sake “Fuyugomori,” which can only be enjoyed in the winter, is also a popular item. Without being swayed by trends, we continue to make sake that will be loved for a long time by locals and sake connoisseurs by continuing to uphold the old-fashioned, sincere, traditional methods of sake brewing.
