History

High-quality sake brewed in the nature-rich mountains of Gifu

Founded in 1818 (Bunsei 1) in the late Edo period. The fifth-generation head of the family, Nagase Kouemon, who was a village headman, started the sake brewing business using the abundant rice and spring water from the naturally rich mountains. Located in a small town surrounded by mountains, the brewery is run by a family, and they stick to small-scale production, brewing high-quality sake by hand with care and attention to every bottle. The resulting sake is brewed slowly at low temperatures to bring out the flavor of the rice, resulting in a smooth, clean-tasting sake.

Natural “brewing water” that springs from the Central Alps

Nakatsugawa, where Ena Brewery is located, is located in the southeastern part of Gifu Prefecture, an area famous for the Kiso River and Ena Gorge. The water the brewery uses for brewing is slightly soft natural mineral water that has been gushing out from the Central Alps for many years. The 7th generation owner of the brewery has been producing small quantities of sake with a focus on family, and of course, he has been particular about the quality of the sake rice “Hida Homare” and the brewing water, which is essential for sake brewing. Although they only make three types of sake, they brew high-quality sake that can only be achieved in a mountain village rich in nature.

Inheriting tradition: genuine handmade sake brewing

Nagase Hirohiko is currently the seventh generation owner of the brewery. After graduating from high school, he went to university in Tokyo and got a job. He then returned home to continue the family business of sake brewing, and is now qualified as a Nanbu Toji brewer, working hard as a brewery Toji brewer. Nagase’s sake brewing can be called truly handmade, and he only produces “Kujiranami” Junmai Ginjo, Junmai Sake, and Honjozo brands. With a total of 21600 litter, it is truly a small-scale production. The brewery’s facilities are still not mechanized, and he continues to challenge himself to make the sake he wants while inheriting traditions.
