Hida-Takayama Beer(Takayama)

Founded in 1995, Hida Takayama Beer was the first local beer produced in Hida. They brew local beer with care, using natural water pumped up from the Hida soil and carefully selected malt. There are many different styles of beer, but Hida Takayama Beer brews a lineup of five standard types, including the “pilsner” type beer that originated in the Czech Republic, the “weizen” that is famous in Germany and Belgium, and the “stout” made using traditional British methods, as well as seasonal limited editions. The flavor of their beers has won them gold medals and awards at beer competitions both in Japan and abroad, where quality is judged at an international level, producing local beers that they can be proud of around the world.

Brewing

100% malt, natural water

We use natural water pumped up from 180m underground in a highland area with a panoramic view of the Northern Alps. The water, filtered through nature in the Hida Mountains, activates the yeast and brings out the flavor of the ingredients. We mainly use malt from Europe, the home of beer. Malt is germinated wheat, and we use various malts according to the style of beer, to give the finished color, flavor, and depth. It enhances the bitterness and sharpness of the beer, giving it a unique character. Hops, the raw material for beer, are rich in polyphenols, a nutrient. Polyphenols are known to have antioxidant properties, and consuming them is said to be effective in preventing lifestyle-related diseases.

Styles

A collection of unique items with their own unique characteristics

When it comes to beer, the famous types are the yellow beer “Pilsner” with a dry mouthfeel and a bitter aftertaste, and the light-colored beer “Pale Ale” with a clean taste. In addition, there is the famous German beer “Weizen” which is made with wheat and leaves a sweet aftertaste with a fruity aroma. The lineup is full of delicious and unique beers that are unique to each country. Other beers include “Stout”, a black beer made using the traditional British method, and “Red Bock”, which is only available in winter. In addition, “Carmina”, a limited edition beer that is called the “black jewel” and has a slow aging period after undergoing secondary fermentation in the bottle, which is rare worldwide. “Hida Takayama Beer” has a balance of hops and malt from the head, and you can enjoy comparing the individual characteristics of each beer, such as the changes in body and the difference in finish. Also, once you have taken a sip, you can enjoy it until the end without getting bored, which is its greatest appeal.

Sticking

“Umami” flavor brought out by live yeast

What all beers have in common, from yellow to dark, is that they are “unfiltered and unheated.” This allows the yeast to remain alive in the bottle, further enhancing the flavor. A rich flavor and mellow taste, full-bodied yet refreshing finish. This is the deliciousness that Hida Takayama Beer is particular about. The female flowers of hops are called “hop cones,” and are the main ingredient in beer. They are extremely important for the bitterness, aroma, and foam of beer, and they suppress the growth of bacteria and improve the shelf life of beer. Beer made with a focus on ingredients becomes a delicious craft beer that fully expresses the power of nature.

evaluation

High quality and rich flavor recognized worldwide

Just as there are contests for wine and sake, there are numerous domestic and international competitions that judge the quality of craft beer on a global level. Beers are judged on a variety of criteria, including taste, aroma, smoothness, and bitterness, and Hida Takayama Beer has won gold medals and awards in a variety of categories for eligible beer styles. They don’t brew to win awards, so there are years when they don’t enter their beer, but they do enter their beer in order to improve their skills and learn about flavors from around the world. The fact that craft beer brewed by hand in Hida Takayama, a small town known as Little Kyoto, has won numerous gold medals is proof that it has a world-class taste.

How to enjoy

It is recommended to drink it at a slightly higher temperature.

You can enjoy beer with food in a wide variety of ways, such as choosing food to match the color of the beer, matching it with country keywords, or matching the contrast of flavors. It goes well with Japanese, Western, and Chinese cuisine, as well as smoked dishes, oils, and game. After pouring, enjoy the overall color, transparency, and aroma. We think you will enjoy it slowly, from the taste to the finish.
