Liqueur specialty

We make sake in the Hida region of Gifu Prefecture, in the heart of Japan. Our products are characterized by using the finest fruit in season throughout the year, capturing the original flavor of the fruit. Our products are made using domestic fruit from a limited number of producers, and brewed with special spring water from Hida. We also value little “surprises,” such as surprising people with their aromas without using any flavorings, or rich sakes that seem familiar but aren’t.

The special lemons used in Limoncello are carefully selected, starting with the soil cultivation, and based on a chemical-free policy. The average sugar content of the lemon juice is 11 degrees. It is these wonderful lemons that make the perfect liquor. Please try this liquor, which allows you to enjoy the sweetness of peach and mango together with the refreshing flavor of lemon.

By hand

The juice is hand squeezed

If you squeeze the white pith, it will have more unpleasant flavors and the quality will deteriorate. We use only the first squeeze, which is squeezed by gently placing our hands on the fruit. The first squeeze yields only 30% of the juice obtained when squeezed normally. The rest of the juice is processed into syrup and cakes.

Strain the juice

To further refine the flavor of the juice, the juice is filtered through a filter bag. Using a fine filter will cause the fruit flavor to be lost, so we use a filter of a moderate fineness in pursuit of deliciousness.
