The originator of “Onikoroshi,” which became synonymous with dry sake
In the 1720s, the previous owner of Oita Sake Brewery moved from Gujo to Hida Takayama and began brewing sake. At the time, this area was under the direct control of the Tokugawa Shogunate and was already a thriving sake brewery, and the sake brewed by Oita was particularly renowned for its dry taste. The sake was given the name “Oni Koroshi” (dry sake that could even kill a demon). To this day, it has become synonymous with dry sake. The name spread throughout the country, and currently there are about 50 brands of sake bearing the name “Oni Koroshi,” with Oita Sake Brewery’s “Hida Jiman Onikoroshi” being said to be the original.
