The originator of “Onikoroshi,” which became synonymous with dry sake

In the 1720s, the previous owner of Oita Sake Brewery moved from Gujo to Hida Takayama and began brewing sake. At the time, this area was under the direct control of the Tokugawa Shogunate and was already a thriving sake brewery, and the sake brewed by Oita was particularly renowned for its dry taste. The sake was given the name “Oni Koroshi” (dry sake that could even kill a demon). To this day, it has become synonymous with dry sake. The name spread throughout the country, and currently there are about 50 brands of sake bearing the name “Oni Koroshi,” with Oita Sake Brewery’s “Hida Jiman Onikoroshi” being said to be the original.

In 1991, Oita Sake Brewery built a new storehouse in an area called Kiyomi, near the center of Takayama. By moving the brewery to a place with a cold climate and high-quality water essential for sake brewing, the brewery has begun anew, incorporating new techniques and further improving the quality of its sake, in addition to the traditional techniques that have been in place for nearly 300 years. Onikoroshi has been loved since ancient times for its dry and smooth taste. This sake has been enjoyed and warmed by people since ancient times, and it is still loved today as a sake that has the spiciness and richness nurtured by the climate of Hida.

The true origin of “Oni Koroshi”

As mentioned above, it was named “Onikoroshi” because it was popular for its “spicy taste that could kill a demon.” Nowadays, many people think of it as packaged sake, but the real origin of the name is that it was named to mean “a pure, delicious sake that can get even a tough man like a demon drunk.” With the local sake boom, trends shifted from sweet to dry sake, and “Onikoroshi” attracted attention. Its good-sounding name and reputation as “dry enough to kill a demon” spread, and it became synonymous with dry sake. However, even with the boom, “Hida no Oita no Onikoroshi” is still brewed carefully using traditional methods, and is not just a spicy sake, but a high-quality sake that will “slay the demons in your heart” when you drink it.
