Hirata Sake Brewery began manufacturing and selling bintsuke oil and candles under the name “Hirataya” in 1769, and began sake brewing in 1895. Located quietly in the old townscape of Hida Takayama, the brewery carefully selects high-quality locally grown sake rice in its blessed environment and climate, and strives to put “quality first” when brewing sake. Based on the concept that “sake is something that is cultivated rather than manufactured,” the sake brewed using traditional handmade methods is elegant in terms of taste, body, and aroma, and is finished with a flavor that can be enjoyed not only by locals but also by sake aficionados alike. This brewery is committed to brewing “delicious sake” in small batches, carefully and thoroughly.

“Suiou” – Drunken old man

The world’s best sake, aged sake “Suiou”

In 1995, President Hirata Keiji and his master brewer came up with a unique long-term storage method, which allows them to age raw sake for over 10 years to produce “aged aged sake.” When the first tank was opened eight years later, it was found to have an amber-colored sake with an unprecedented mellowness and flavor, the finest aged sake the brewer was looking for. Through this experience and proven track record, “Suio” was born. After that, it was entered in sake competitions around Japan, winning gold medals many times in the aged sake category, and finally its deliciousness was recognized when it was awarded Champion SAKE, the highest award in the sake category, at the IWC (International Wine Challenge), the world’s largest alcohol competition, in 2014. This sake is carefully brewed under strict control, using the experience and skills cultivated by the master brewer over many years. Please enjoy the taste that can only be found at a small brewery.
