A 200-year-old sake brewery in the heart of an old town

Located in a castle town in a mountain village and along the clear Miyagawa River, Hida Takayama has flourished as a merchant town since ancient times. Kamisannomachi is an old townscape that has retained the historical atmosphere that has been passed down since the Edo period, with not only sake breweries but also miso, tamari and oil shops lined up in the area since long ago. Standing in the heart of this town is Funasaka Sake Brewery, a sake brewery with over 200 years of history. The main building remains unchanged from 160 years ago, and the brewery has maintained the same belief since its founding that “sake brewing lies in making koji” and is surrounded by a natural environment suitable for sake brewing, with a cold climate and clear spring water, making it a traditional sake brewery that has continued to brew sake that is loved by locals.

“Everyday drinking sake” is the origin of sake brewing

The brewery uses Yamadanishiki, Gohyakumangoku, and locally grown Hidahomare rice, and the sake is brewed with underground water from the Northern Alps, bringing out the best in each type of rice. Both the dry and sweet varieties have been loved by locals since the brewery’s founding. The brewery’s signature brand, Hida no Jingoro, is a refreshing dry sake for everyday drinking, while Miyamagiku is a gentle sweet sake. Both can be enjoyed cold or hot, making them two of the brewery’s signature “classic sakes you’ll want to have by your side.” In addition to pursuing these traditional flavors, the brewery also has a restaurant and tasting counter that incorporates plenty of local ingredients, introducing how to enjoy sake in a way that is familiar and easy to understand for everyone. The brewery continues to challenge itself to further expand the possibilities of sake.
